Cauliflower Biscuits


#SmilingKiddo is napping so I'm posting this sooner than later. I'm still experimenting with this recipe so this is by no means the last variation. However, since many of you have asked, here it is. My toddler doesn't eat veggies. This is heartbreaking since his mama loves particular ones. Cauliflower is one vegetable I could have all the time in just about anyway. Knowing my kid eats all things bread and carb, I started playing with this biscuit idea. 



In a food processor, mince:

  • 1 head of cauliflower
  • 4 garlic gloves
  • 1 handful of fresh parsley
  • A few sprigs of dill
In a bowl, mix:
  • 2 cups of flour
  • 1 tsp baking powder
  • 1 tsp salt
Mix cauliflower and dry ingredients with:
  • 2 beaten eggs
  • 1/4 cup milk
  • 1/3 cup oil
Bake at 375F for about 30 min in muffin baking sheet. Please keep in mind these measurements are estimations. I eyeball everything in the kitchen.

Clatitie 

Clatitie are Romanian crepes. This is my weakness. It takes will power for me to stop eating these.

3 eggs
1/2 cup sugar
2 tbs vanilla
2 cups flour
1 3/4 cups milk
1/4 cup orange juice

Whisk eggs, sugar, and vanilla. Add coffee and juice. You want the consistency to be smooth and soupy, not as thick as pancake batter.

Spray a round skillet with PAM and heat over medium for a minute. Using a ladle, pour the batter so it thinly covers the bottom. It takes about a minute or two for each side to cook.  Flip when you can easily move the clatite by moving the skillet.  Repeat until the batter is gone.

I spread jam and then roll. Some people eat these with a cream cheese. 

3 Bean Ham Soup

We've been getting rain on and off here in Atlanta. And with a good thunderstorm, all I want to do is cuddle up on the couch with a bowl of soup and relax. I may not get to relax, but a girl has to eat. I made ham earlier this year and froze some. I got it out to make this soup.



Ingredients

2 stalks of celery
3 cloves of garlic
1 onion
2 carrots
4 cups of ham
2 beers 
1 cup peas
1 cup green beans
1 small of baked beans
1 can pinto beans
1 can garbanzo beans
3 TBS fresh basil
1 TBS fresh parsley


Saute onions, garlic, and celery. Add chopped carrots and fresh herbs. Chop ham into one inch chunks and add. You can lightly fry the ham. I had some ham drippings I froze with the ham and added that. Add beans and two cans of beer.


I always make soups and stews with beer. I had local beer on hand and used Red Hare. Keep in mind that the beer will impact the taste. Bring to a boil. Add paprika and black pepper to taste. You don't need to add salt. The ham is plenty salty.  Simmer for a little bit. It's best on the second day. The boyfriend and I will be having it for dinner tomorrow.

It's been a while, I know. But I've been busy with this PhD business and #SmilingBaby. But I was inspired by some split chicken breasts and bacon. So loves, here it is. It was pretty good.



Ingredients
5 cloves garlic
1/2 lb bacon, chopped
1 Tbs coconut oil
3 Tbs fresh thyme
2 Tbs fresh sage
2 split chicken breasts

This is pretty simple. Mix all these ingredients. Loosen the skin from the chicken breasts and stuff with bacon mixture. I baked it at 350 for about 45 minutes with potatoes and carrots, rubbed the chicken with grape seed oil, and added salt and paprika to taste on the skin.


French Toast Breakfast Casserole

I made french toast earlier this week using cinnamon and raisin bread. It was good that I didn't want to waste the left overs. I decided to incorporate french toast in a breakfast casserole this morning. It was so good.


Ingredients
6 pieces of cinnamon raisin french toast
1 lb browned mild sausage
6 eggs
1/2 cup shredded cheese
1 onion, diced
1 yellow pepper
1 cup nonfat milk

Preheat oven to 350. Lay the pieces of french toast on a greased 9 x 13 inch pan. Mix eggs, sausage, onion,pepper, and milk. Pour over french toast and add shredded cheese. Bake for  30 min.

Did you know today was National Bacon Day? Here's a tasty bacon treat that is super easy to make.

Bacon Wrapped Asparagus

Preheat oven to 400. Spread about 1 cup of light brown sugar on a plate. Pat one side of bacon on the brown sugar. Roll the asparagus and bake until crisp, about 30 minutes.





Garlic & Eggplant Dip

I made a garlic and eggplant dip for a small gathering I'm having tomorrow and could have sworn I had the recipe on here. But since I don't and since friends are asking for the recipe, here it is. I've made so many variations of this, but here is this one.

Garlic and Eggplant Dip

Ingredients
1 large eggplant
5 cloves of garlic, chopped
1/2 grape seed oil
1 tbs of ground mustard

Preheat your oven to 350. Cut the eggplant into quarters. Stab with a fork. Lightly coat the eggplant with oil and roast for about an hour or until it's super soft. After it cools, remove the skin from the eggplant, and cut into big chunks. In your blender, blend the eggplant oil, mustard seed, and garlic.

Now, I have made variations of this. I normally use EVOO, but I had grape seed oil on hand. I've also added two hard boiled egg yolks to the mix. Sometimes, I'll add a splash of lemon juice. If I want it more creamy, I add about 1/4 cup light mayo and 1/4 tsp mustard.

It's great with crackers and veggie. Enjoy!
